After receiving an e-mail from a friend who said there were Severe Thunderstorms and Tornado warnings for our area, we thought we better head home from the Texas Sandfest 2012. So, we packed up the kids and caught the ferry back to Corpus Christi. Even though we were headed home, we really enjoyed being out at Mustang Island in Port Aransas at the Texas Sandfest 2012. As so many Christians everywhere are observing the Lenten season, so does my family. With our hearts and minds preparing for Easter through the acts of penance, prayer, and almsgiving, fasting and abstinence are on our list of priorities. As a person with seafood allergies and the one preparing meals in our home, abstinence becomes a challenge. We are not a vegetarian family (although sometimes I think we should be). So, what do you eat if you can't have seafood? How do you feed your family a complete meal without that protein in the form of chicken, pork, or red meat which so many of us rely on?     Read More
